However, the origin of the Chiffon Cake has a long tradition. Harry Baker, who was a Los Angeles insurance agent, was the person who created the Chiffon cake for the first time. For about two decades, he has kept this recipe a closely guarded secret. Harry has offered his assistance to the Brown Derby Restaurant in Los Angeles which catered to Hollywood’s elite. He then sold the recipe to the General Mills Betty Crocker food company in the year 1947. So until 1947, Baker was the only person who had baked the chiffon cakes.

General Mills marketed the Chiffon Cake recipe as “the first new cake in 100 years.” It made a nationwide sensation in the year 1948 when it was published in the Better Homes and Gardens magazine. New chiffon cake recipes with different flavors like orange, chocolate, maple syrup, walnut, and lemon were introduced a little later. Chiffon Cake is prepared with little different ingredients than the regular cake recipe. It is prepared by using vegetable oil instead of butter or shortening. The egg whites are beaten separately from yolks and added, which is the reason for the light, airy texture of the lemon chiffon cake.
